Recipes to Celebrate St. Patrick's Day

Here are some delicious green recipes that would be a perfect fit to celebrate St. Patrick's Day.



1 lb. rotelle
1/2 c. mayonnaise
2 tbsp. olive oil
1 bunch spinach
4 cloves garlic
1/2 c. olive oil
Salt and pepper to taste
1 red bell pepper, diced for garnish

Cook rotelle according to package instructions, drain. Cool and set aside. Mix mayonnaise and 2 tablespoons olive oil together. Combine with pasta and mix well.

For Pesto: Clean and trim spinach. Place spinach, garlic and salt and pepper in a food processor. Gradually add oil through feed tube and blend until mixture is consistency of thin mayonnaise. Mix pesto with pasta mixture. Add bell pepper. Chill and serve. Makes 10.



2 1/2 cups all purpose flour
2 cups sugar
1 Tablespoon cocoa
1 teaspoon salt
1 teaspoon baking soda
2 eggs
1 cup oil
1 cup buttermilk
1 Tablespoon vinegar
1 teaspoon vanilla
1 oz green food coloring


1 package of softened cream cheese
1/4 cup softened butter
1 teaspoon vanilla extract
1 bag powdered sugar (2 lb bag)
Milk as needed

green food colouring (preferably paste type)
additional candies or decorating sugar for topping

Makes 1 dozen cupcakes

Preheat your oven to 350 degrees.

Line muffin tins with fun St. Patrick's Day themed liners. 

Lightly stir eggs in a medium bowl with whisk.  Add in remaining liquid ingredients.   Whisk until blended and sit aside.  

Place all dry ingredients in your mixing bowl and stir together well.

Add green food colouring into the wet ingredients and stir until you reach the desired shade you want.

Pour your wet ingredients into your dry ingredients and mix on medium-high for about a minute or two until well combined and green as the day is long.    

Pour the batter into cupcake liners.  

Baking times will vary based on what you are using.  Regular size cupcakes were around 16 miuntes, mini cupcakes about 13 minutes.

Let cook for 10-15 minutes and than remove from pans.

While cooling, prepare frosting:

Cream together cream cheese, butter and vanilla in a bowl until smooth.   Gradually add in powdered sugar and continue mixing.   Add in milk as needed to get to the desired consistency.

Frost your cake/cupcakes then decorate with green sprinkles or coloured sugar, shamrocks made out of gummy candies -- or whatever else your little leprechaun can think of.


Mom and Dad can enjoy some green beer, while the kids enjoy some cucumber juice and everyone enjoys a special St. Patrick's Day!
