On the Go Breakfast Quiche

Looking for a breakfast food that can be enjoyed on the go? Here is a great recipe that is healthy and delicious!



12 large eggs

¾ cup milk or milk alternative

1 tsp dried oregano

1 tsp dried thyme

¼ tsp salt

¼ tsp pepper

3 cups of finely chopped veggies of choice (I like 1 cup broccoli, 1 cup spinach and 3/4 cup red pepper, ¼ cup mushrooms)

½ cup onion, finely chopped

3 cloves garlic, minced

Optional Add ins:

1.5 cups cheese of your choice. Add 1 cup to mix, and use ½ cup to top quiches before putting in oven
Ham or bacon, chopped



  1. Whisk together eggs, milk and spices.
  2. Mix in vegetables & garlic
  3. Pour into greased muffin pan, about ¾ full
  4. Bake for 20 minutes at 375F
  5. Allow to cool before removing from pan
  6. Enjoy hot or store in fridge to re-heat over next 3-4 days. Freeze extras for quick & easy breakfasts on the go.
