Delicious Recipes for Thanksgiving Turkey leftovers!

What to do with all the Turkey leftovers? Here are a few delicious recipes to help you enjoy the bird for a few extra days.

Turkey Soup

Ingredients:

  • 1 leftover turkey carcass (from a 14-pound turkey)
  • 3 quarts water
  • 2 cans (14-1/2 ounces each) reduced-sodium chicken broth
  • 1/2 cup uncooked long-grain rice
  • 1 medium onion, finely chopped
  • 4 celery ribs, finely chopped
  • 2 medium carrots, grated
  • 1 bay leaf
  • Dash poultry seasoning
  • Salt, optional
  • Pepper
  • Onion powder
  • Garlic powder

 

Leftover Turkey and Stuffing Stuffed Peppers

Ingredients:

  • 1 large egg, beaten
  • 2 c. leftover turkey, shredded
  • 2 c. leftover stuffing
  • kosher salt
  • Freshly ground black pepper
  • 4 red and yellow bell peppers, hollowed out
  • 1 1/2 c. shredded mozzarella
  • Fresh parsley, for garnish

 

Turkey Turnovers

Ingredients:

  • 1/2 c. long-grain white rice (we used basmati)
  • 1/2 c. Sliced almonds
  • 1 tbsp. olive oil
  • 1 large onion, chopped
  • kosher salt
  • black pepper
  • 2 tsp. ground cinnamon
  • 2 c. shredded leftover turkey or rotisserie chicken
  • 1/2 c. dried apricots (about 14), sliced
  • 1/2 tsp. orange zest
  • 1/2 c. sour cream
  • 1/2 c. cilantro, roughly chopped
  • Flour for the surface
  • 2 refrigerated rolled pie crusts
  • 1 large egg

 

Turkey Lasagna

Ingredients:

  • Butter, for greasing pan
  • 2 tbsp. bread crumbs
  • 3 c. prepared mashed potatoes
  • 2 eggs, lightly beaten
  • 1 c. shredded Gruyère cheese
  • 1 c. chopped cooked green beans (or other leftover green vegetables)
  • 1 c. leftover shredded turkey
  • 1/2 c. cranberry sauce
  • 1/2 c. Gravy

 

Turkey a la King

Ingredients:

  • 2 tablespoons butter
  • 1-3/4 cups sliced fresh mushrooms
  • 1 celery rib, chopped
  • 1/4 cup chopped onion
  • 1/4 cup chopped green pepper
  • 1/4 cup all-purpose flour
  • 1 cup reduced-sodium chicken broth
  • 1 cup fat-free milk
  • 2 cups cubed cooked turkey breast
  • 1 cup frozen peas
  • 1/2 teaspoon salt
  • 2 cups hot cooked rice

 

Help Yourself Turkey Tacos


Ingredients:

  • 1 lb (454 g) lean ground turkey
  • 2 cloves garlic, minced
  • 1 tbsp (15 mL) chili powder
  • 2 tsp (10 mL) dried oregano
  • 1/2 tsp (2 mL) each salt and pepper
  • 4 green onions, chopped
  • 1/4 cup (60 mL) chili sauce
  • 8 taco shells
  • 1 cup (250 mL) shredded lettuce
  • 2 small plum tomatoes, chopped
  • 1 cup (250 mL) shredded Cheddar cheese
  • 1/2 cup (125 mL) light sour cream

Ingredients:

  • 1/2 pkg (450 g pkg) frozen rolled butter puff pastry, thawed
  • 1 egg, beaten
  • 2 tbsp (30 mL) butter
  • 1 onion, chopped
  • 1 rib celery, chopped
  • 1 acorn squash, (about 500 g), peeled and cubed (about 4 cups)
  • 1/4 tsp (1 mL) salt
  • 1/4 tsp (1 mL) pepper
  • 1/3 cup (75 mL) all-purpose flour
  • 2 cups (500 mL) sodium-reduced chicken broth
  • 3 cups (750 mL) shredded cooked turkey, white and dark meat
  • 2 tbsp (30 mL) thinly sliced fresh sage
  • 1 pinch nutmeg
  • 2 cups (500 mL) fresh baby spinach
